Georges created Bar Vivar to showcase, with great pride and respect, the beauty, tradition and honesty of Spanish gastronomy. His passion for Spanish food dates to his childhood summers living with family friends in Andalucia. After cooking in Montreal, British Columbia and parts of the United States, Georges returned to Spain to walk its Camino de Santiago de Compostela. He then cooked alongside many generous chef/owners operating in Galicia, Asturias, the Basque Country and Andalucia who so profoundly expanded his mind and continue to inspire Bar Vivar’s menus every day.
Patrick: Ancient, acerbic.
